Castellote is a stone-built village in the Maestrazgo region of Teruel province, stacked below a restored Templar castle on a rocky outcrop above a reservoir. With a population under 800, it's a place people visit for silence, hiking and medieval architecture rather than nightlife or restaurants with much choice. The castle itself, rebuilt after Civil War damage, is the main draw, along with the narrow lanes of the old quarter and the artificial lake below for a swim or paddle in summer.

Be honest: this is deep rural Aragon, distances between villages are long, public transport is sparse, and you need a car to make sense of a stay here. That said, eight hotels for a village this size shows it takes tourism seriously, mostly small family-run guesthouses rather than chains. Stay in the old town below the castle walls, within walking distance of the main square, so you're not driving after dinner on unlit mountain roads.
