Staying in Göreme
Göreme is the small town that Cappadocia's hot-air-balloon photos are actually taken over: a cluster of fairy chimneys and rock-cut Byzantine churches, with the Göreme Open Air Museum on its edge holding some of the best-preserved frescoes in the region. The cave-hotel format here is genuine rather than gimmicky — many properties are carved into or built against the actual volcanic rock, with terraces designed specifically for sunrise balloon-watching.
The town itself is tiny, built almost entirely around tourism, and can feel overrun at dawn and dusk when balloon traffic and tour buses converge; outside those windows it's quiet to the point of sleepy. Stay somewhere with a rooftop or terrace on the west side of town for the best unobstructed balloon-sunrise views.
