Cologne is defined by its cathedral: a twin-spired Gothic giant that took over six hundred years to complete and somehow survived the bombing that flattened around ninety per cent of the surrounding old town by 1945. Kolsch, the local beer, can legally only be brewed within the city and is poured a glass at a time in narrow tumblers called Stangen, topped up until you cover the mat with a coaster.
The rebuilt Altstadt around the Dom holds most of the traditional Kolsch breweries and beer halls, an easy walk from the river. It is a working, modern city rather than a preserved one, so do not expect Bamberg-style half-timbering, since much of the centre is postwar reconstruction. Stay near the Altstadt or Hohenzollernring for cathedral views and Kolsch houses within walking distance.
