Staying in Carcassonne
Carcassonne is really two towns: La Cité, the walled medieval citadel of double ramparts and turreted towers on its hill above the Aude, and the Bastide Saint-Louis, the planned lower town where most people actually live and shop. The Cité owes its storybook look to Eugène Viollet-le-Duc's heavy-handed nineteenth-century restoration, and purists still grumble about his pointed slate roofs, but it earned UNESCO status regardless and is one of the most striking sights in southern France.
Be honest: inside the walls, summer crowds and wall-to-wall souvenir shops selling plastic swords can make it feel like a theme park by midday, and evenings are when it is at its best. The Bastide is calmer and more ordinary, with a pleasant central square, the Canal du Midi on its edge and plenty of places serving cassoulet, the region's slow-cooked bean and meat dish. Stay in the Bastide Saint-Louis for better value and real town life, then walk across the Pont Vieux to the Cité early or late when the day-trippers have gone.
